september always makes me want to do homework and watch gilmore girls…anyone else?

As the weather slowly gets cooler and the whole world seems to prepare for the change of seasons, the air growing crisper and the evenings teasing of cozier ones to come. I always feel like my favorite season is the one I am right on the cusp of, so right now my favorite is fall. Please enjoy this smorgasbord of fall findings and favorites.

This right here is my all time favorite fall recipe. Bar none. Grab your pen please.

My mom has been making this butternut squash soup for many many years and she always knows to make extra for me to take home. In the past few years I have taken up the torch and learned the recipe for myself. There is nothing like coming in from a cool, rainy day to a warm and delicious autumnal soup. 

When I say “recipe” be warned, if there is one thing I’ve learned from my mom over the years is how to wing it in the food department, a little of this, a little of that… Sooo there may or may not be an actual recipe per say, mostly it’s a guideline and you can feel it out for yourself. Adjust amounts and spices to your taste and crowd. 

  • An onion, diced
  • A few cloves of garlic, minced
  • A few cups of cubed butternut squash (they sell it precut at costco and I usually use a whole container to make a big batch)
  • Salt & pepper {to taste}
  • Smoked paprika 
  • A couple teaspoons dried italian herbs
  • Chicken stock
  • 2-3 jalapeno sausages, cut into slices (you could do plain, or a different flavor, but I always get the jalapeno sausage from costco)
  • Spinach (optional)
  • Coconut/ regular cream (optional, for creaminess)

 

Saute onion until transparent and add garlic and cook until fragrant. Add in spices, cubed squash, and chicken stock and bring to a boil. Turn down heat and let simmer for 1- 2 hours. You can use a crock pot/instant pot but I usually use my dutch oven, a big pot works too! The longer you cook, the better flavor melding you get. I usually add in a couple of handfuls of spinach (to make myself feel healthier hahaha) and sausage later in the cooking process. If you like a creamy soup, wait to add sausage until you add cream and blend (either using an immersion blender or regular one). Serve with buttery sourdough to really bless your tastebuds…

Hot Cinnamon Spice // Cinnamon Sunset by Harney & Sons

Both are really good, pretty similar, but I prefer the sunset. You can get them at target for sure, or online I think.

Okay, now getting to my favorite part of fall… the fashion!! Sweaters, button downs, trousers, layers, the whole nine yards. In Texas September is pretty much not fall, with temperatures hovering in the 80’s and 90’s, but I still feel the need to dress towards the season. So with these transitional pieces, I can create cozy inspired outfits without burning up. 

  • An oversized white button down will never steer you wrong, I recently incorporated one that has more of a cream undertone, which is perfect for fall!
  • A solid pair of straight jeans
  • Knit or ribbed tanks/ sweater vests
  • Layerable dress
  • Platform chucks
  • Loafers/ oxfords
  • sweater/ sweatshirt & shorts {this combo always makes me feel so cool hehe}

I know my last post was all about books, but since then I read a whole series 🤭 I couldn’t possibly talk about it more, seriously I’m pretty sure everyone who knows me wants to punch me at this point hahaha. It’s such a fun captivating series, the author is just incredible at weaving together the complex plot and riddle filled games. Okay okay, so it’s the Inheritance Games series by Jennifer Lynn Barnes!!! If you haven’t read it, just please do it. Also, the newest book {well it’s a spinoff series, but same characters} just dropped two weeks ago. gasp. swoon. I know. reading it as we speak.
